Gulasch - A Murder is Announced


Im kleinen friedlichen Dorf Chipping Cleghorn passiert nicht viel. Als daher in der wöchentlichen Gazette ein Mord angekündigt wird, der am gleichen Abend bei Miss Letitia Blacklock stattfinden soll, sind alle erst entsetzt und dann fasziniert. Niemand möchte so eine Aufregung verpassen und daher finden sich alle pünktlich ein. Als dann aber echte Schüsse fallen und eine Leiche am Boden liegt, wird aus dem Spiel blutiger Ernst.

In diesem Buch wird viel gekocht und viel gegessen, dank der Köchin von Miss Blacklock, einem Flüchtlingsmädchen aus Zentraleuropa (vermutlich Ungarn), namens Mitzi.

Da Wien zu Zeiten der k-&-Monarchie als 'melting pot' Europas galt, sind hier alle möglichen kulturellen, politischen und auch kulinarischen Einflüsse zusammengekommen und haben Wien zu dem gemacht was es heute ist. Die Rezepte aus Böhmen, Ungarn etc. sind mittlerweile zu einem fixen Bestandteil der österreichischen Küche geworden, worauf wir sehr stolz sind.

Gulasch gehört zu diesen Klassikern der 'österreichischen' Küche und es gibt Unmengen von Versionen, hier ist mein Lieblingsrezept, einfach in der Zubereitung und äußerst lecker!


Gulash (Goulash)
  • 1 kg Wadfleisch
  • 1,5 kg Zwiebeln, (vorzugsweise rote)
  • 150g Schmalz
  • 2 rote Paprika
  • 1 Tomate
  • 6 Knoblauchzehen
  • 50g Paprika edelsüß (mit 2 EL Apfelessig und 1/8l Wasser aufgelöst)
  • Kümmel. Majoran, 3 Lorbeerblätter, Salz, Pfeffer, etwas Zucker und geriebene Schale einer Zitrone
  • 2-3 l Rindsuppe
Die Zwiebel langsam goldgelb rösten, das Fleisch dazugeben und langsam dünsten. Majoran, Kümmel, Lorbeerblätter, Paprika + Essigwasser dazugeben.
Dann die Paprika, Tomate und den Knoblauch und die restlichen Gewürze dazugeben. Nach etwa 5 Minuten mit Suppe aufgießen. Oft umrühren und köcheln lassen, bei Bedarf nachwürzen. Auch den Zucker nicht vergessen und die Zitronenschalen, wenn man sie verwenden möchte.
Das Ganze sollte etwa 1 Stunde köcheln.
Mit Nockerln, Kartoffeln oder Brot servieren.
Tip: Gulasch schmeckt am besten wenn man es am Vortag vorbereitet und aufwärmt!

Not much happens in the small, peaceful village of Chipping Cleghorn. Therefore, when a murder is announced in the the weekly Gazette, to happen that same evening, at the home of Miss Letitia Blacklock, everyone is astonished - and then intrigued. No one wanted to miss such excitement and so they all turn up in time for the main event. But when the first shots are fired and a body falls to the floor, the game becomes deadly serious.

There's a lot of food and drink in this book, thanks mainly to Miss Blacklock's cook, Mitzi. She's a refugee from Central Europe (presumably Hungary).

At the height of the Austro-Hungarian Empire, the capital, Vienna, was a true 'melting pot' at the heart of Europe. It was here that all different kinds of cultures met, the political and culinary influences of all of them have made Vienna what it is today. Recipes and cuisine from Bohemia, Hungary etc. have all become a fixed part of Austrian cuisine, a cuisine and heritage which we are very proud of.

Goulash is one of these classics of 'Austrian' cuisine and there are tons of versions. Here's my favorite recipe, easy to prepare and very tasty!
 
Goulash (Goulash) 
  • 1 kg stewing beef
  • 1.5 kg onions (preferably red)
  • 150g lard
  • 2 red peppers
  • 1 tomato
  • 6 garlic cloves
  • 50g Paprika sweet (dissolved in 2 tbsp cider vinegar and 1/8l water)
  • Cumin. Marjoram 3 bay leaves, salt, pepper, a little sugar and grated rind of one lemon
  • 2-3 l beef stock
Fry the onion slowly until it is golden brown, add the meat and cook slowly. Then add the marjoram,caraway seeds, bay leaves, and your paprika mix.

Then add the peppers, tomatoes and garlic and remaining spices. After about 5 minutes slowly add your stock. Stir often and leave to simmer. Season if necessary. (Also don't forget to add the sugar and lemon peel, if you want to use it)

The whole thing should simmer for about 1 hour.
Serve with dumplings, potatoes or bread.
Tip: Goulash tastes best when it is prepared the day before and reheated!
