Würziges Lammragout - The Big Four

Die großen Vier (The Big Four) ist der siebente Roman von Agatha Christie und obwohl Hercule Poirot selbst diesen Fall als seinen größten bezeichnet, ist es meiner Meinung nach einer der schwächeren. Es geht nicht wie sonst um die Aufklärung eines Verbrechens und eine Mörderjagd, sondern Hercule Poirot jagt diesmal eine Verbrecherbande, angeführt vom Chinesen Li Chang Yen, die die Weltherrschaft an sich bringen möchte und dabei äußerst gerissen vorgeht.

Das folgende Rezept gehört zu meinen Lieblings-Lammrezepten, nicht nur weil es fantastisch schmeckt (und das ist schließlich nicht unwesentlich!! ;) ), sondern auch weil es einfach in der Zubereitung ist, sich gut vorbereiten lässt wenn man Gäste hat (es schadet nicht es schon am Vortag zu machen, ganz im Gegenteil!) und sich auch einfrieren lässt, sollte wider Erwarten etwas übrig bleiben.
Ich serviere es am liebsten mit Couscous, es geht aber auch Reis oder einfach nur frisches Weissbrot.

Würziges Lammragout
  • 550g Lammfleisch, gewürfelt
  • 1 EL Mehl
  • 2 EL Olivenöl
  • 2 Zwiebeln, gewürfelt
  • 3 große Karotten, geschält und in größere Stücke geschnitten
  • 2 Knoblauchzehen, fein geschnitten
  • 600ml Lamm-, Huhn- oder Gemüsefond
  • 1 EL Preiselbeermarmelade
  • 2 TL Tomatenmark
  • 12 Dörrpflaumen
  • 3 EL frische Petersilie, gehackt
  • Salz, Pfeffer
Das geschnittene Fleisch kommt mit dem Mehl, Salz und Pfeffer in einen Plastiksack und wird dann gut durchgeschüttelt, bis das Fleisch rundherum bedeckt ist.

In einem großen Topf wird das Öl erhitzt und dann das Lamm, die Zwiebeln und Karotten bei mittlerer Hitze unter regelmäßigem Rühren angebraten, bis alles rundherum schön goldbraun ist, das dauert etwa 8-10 Minuten. Dann kommt der Knoblauch dazu und wird für eine weitere Minute mitgebraten.
Jetzt den Fond nach Wahl dazugießen und zum kochen bringen. Dann die Hitze reduzieren und bei geschlossenem Deckel etwa 20 Minuten köcheln lassen, bis alles ein bisschen eingedickt ist.
Schließlich die Preiselbeermarmelade, das Tomatenmark, die Pflaumen und die Petersilie dazugeben und salzen und pfeffern. Nochmal erwärmen und dann servieren!

This time, Hercule isn't solving a crime, or hunting a murderer but chasing a gang, led by Chinese Li Chang Yen, which wants world domination and is extremely smart about trying to get it.

The following recipe is one of my favorite lamb recipes, not only because it tastes fantastic (and this is not insignificant! ;)), But also because it is easy to prepare, especially when you have guests (it does it no harm to make it the day before, quite the opposite in fact!) and it also freezes well if, slightly unexpectedly, there is a little left over.
I like to serve this with couscous, but it is also great with plain rice or fresh white bread.


Spicy lamb stew

  • 550g lamb, diced
  • 1 tbsp flour
  • 2 tbsp olive oil
  • 2 onions, diced
  • 3 large carrots, peeled and cut into large pieces
  • 2 garlic cloves, finely chopped
  • 600ml lamb, chicken or vegetable stock
  • 1 tbsp cranberry sauce
  • 2 tsp tomato paste
  • 12 dried plums
  • 3 tbsp fresh parsley, chopped
  • Salt, pepper

Put the diced meat, flour, salt and pepper into a plastic food bag and then shake well until the meat is well covered.
In a large pot, heat the oil and then add the lamb, onions and carrots, fry over medium heat, stirring regularly, until everything is golden brown all over, which takes about 8-10 minutes. Then add the garlic and fry together for a few minutes.
Now take the stock of your choice, pour it over the lamb and vegetables and bring it all to a boil. Reduce the heat and let simmer with the lid on for about 20 minutes until it has thickend slightly.
Finally, add the cranberry sauce, tomato paste, prunes and parsley and season with salt and pepper. Then, re-heat and serve!
