Sausages - Hallowe'en Party

When Poirot goes to seek the advice of the, now retired, Superintendent Spence, he dines on sausages and strong tea. A superb way to dine!

I'd never considered making my own sausages until I was looking at Florence White's most excellent book Good Things in England: A Practical Cookery Book for Everyday Use. There are a number of recipes for skinless sausages which, apparently were fairly common to different regions of England - and she has recipes from Cornwall, Oxford, Epping and Suffolk. I adapted the recipe "To Make Very Good Oxford Sausages" taken from 'Miss Wettin's manuscript book, 18th century, lent by Lady Gomme'. They are very good sausages indeed. To be served, obviously, with tea, following Florence White's instructions for "How to Make Good Tea".

Very Good Oxford Sausages (makes about 10-12)
  • 500g pork mince
  • 500g veal
  • 100g beef suet
  • 2 heaped tsp finely chopped sage
  • 1 1/2 tsp finely chopped thyme
  • good grating of nutmeg
  • salt and pepper
  • flour
Prepare the veal by cutting away all sinew and fat. cut it up very finely (in a food processor will be fine - but be careful to not mush it). Put the minced pork into a mixing bowl and add the veal. Mix them together well. Then add the beef suet and mix, finally adding the herbs and seasoning (it was good with a lot of cracked black pepper) and give it a final mix.

Take a fistful of mixture and roll it into a sausage shape. Dredge a plate with flour and roll the sausages in flour before frying.

Als Poirot seinen alten Freund Superintendent Spence, der mittlerweile im Ruhestand ist, aufsucht und um Rat fragt, dinieren die beiden Würste und starken Tee. Ist das nicht herrlich?

Ich hätte nie gedacht dass ich einmal selber Würste machen würde, bis ich ich das hervorragende Buch von Florence White: Good Things in England: A Practical Cookery Book for Everyday Use gefunden habe. Darin finden sich einige Rezepte für Würste ohne Haut, die scheinbar in den diversen Regionen Englands alltäglich sind, darunter Rezepte aus Cornwall, Oxford, Epping und Suffolk.

Ich habe hier das Rezept "To Make Very Good Oxford Sausages" aus 'Miss Wettin's manuscript book, 18th century, lent by Lady Gomme' abgewandelt. Und es sind wirklich sehr gute Würste! Und natürlich sollte man sie mit Tee servieren, nach den Anleitungen von Florence White in
"How to Make Good Tea".

Sehr gute Oxford Würste (ergibt ca. 10-12)
  • 500g faschiertes Schweinefleisch
  • 500g Kalbfleisch
  • 100g Rindertalg
  • 2 gehäufte TL fein gehackter Salbei
  • 1 1/2 TL fein gehackter Thymian
  • Muskatnuss
  • Salz, Pfeffer
  • Mehl
Als erstes werden vom Kalbfleisch alle Sehnen, Flachsen und Fettreste weggeschnitten und dann wird es ganz fein geschnitten. Man kann es auch im Mixer zerkleinern oder durch den Fleischwolf drehen, aber dabei aufpassen dass es kein Gatsch wird. Das Kalbfleisch und das faschierte Schweinefleisch in eine Schüssel geben und vermengen. Dann wird der Rindertalg dazugemischt und schließlich kommen die Kräuter und Gewürze dazu (am besten nicht mit frisch gemahlenem schwarzen Pfeffer sparen) und nochmals gut mischen.

Ungefähr eine Handvoll der Masse in eine Wurstform rollen und in Mehl wälzen, bevor man sie in einer Pfanne herausbrät.

    Thanks for your follow on Twitter - it led me to your blog. What a brilliant idea and how it strikes a chord. My family are all readers and we love our fiction. When my children were small they listened to audio books and as they got a bit older moved onto Agatha Christie ones. They are complete addicts and now as teenagers still love reading the books (and watching the David Suchet series). I've promised my daughter a visit to AC's National Trust property in Devon this summer.
    I'm part of a book club where we theme meal at the discussion to food mentioned or relevant to the book but I'm going to read Agatha Christie with new eyes now. Poirots tisanes and liquors vs English cooking is a great starting point.
