Birne Helene - Sparkling Cyanide (Remembered Death)


Es wird viel und vorzüglich gegessen in diesem Buch. Die beiden Morde passieren jeweils in einem noblen Londoner Restaurant und es werden die herrlichsten Dinge aufgetischt: Austern, Seezunge, Champagner, gebratene Hühnerleber als Zwischengericht (die in Kürze folgen wird) und eben auch Birne Helene als Dessert.

Für dieses Rezept kann man die einzelnen Elemente (Birnen(kompott), Vanilleeis und Schokoladensauce) jeweils selbst zubereiten oder, wenn es schnell gehen soll, natürlich auch fertig kaufen. Aber besonders bei gekauftem Vanilleeis bitte unbedingt auf die Qualität achten, man schmeckt den Unterschied!
Die Rezepte für das Birnenkompott und die Schokoladensauce stammen aus dem wunderbaren Buch 'Die gute Küche' von Plachutta und Wagner, DER Leitfaden für die traditionelle österreichische Küche.

Birnenkompott (für 6 Portionen)
  • 900g Birnen
  • 150g Kristallzucker
  • Zitronensaft
  • ca. 600ml Wasser
Die Birnen schälen, halbieren und entkernen. Wasser, Zucker und Zitronensaft aufkochen, die Birnenhälften einlegen, nochmals aufkochen und ca. 5 Minuten weich dünsten.

Vanilleeis
  • 250ml Schlagobers
  • 4 große Eigelb
  • 2 gehäufte TL Vanillepuddingpulver
  • 50g Zucker
  • 270g Creme fraiche
  • 1 TL Vanille Extrakt oder Vanillinzucker
Das Schlagobers in einem kleinen Topf zum sieden bringen, dabei aufpassen dass es nicht zu kochen beginnt. Währenddessen die Eigelbe, das Vanille Extrakt, Vanillepulver und den Zucker in einer Schüssel glatt rühren.
Dann das heiße Schlagobers dazugießen und weiter rühren. Jetzt wieder in den Topf zurück gießen und bei mittlerer Temperatur immer weiter rühren, bis die Mischung eindickt und fast zu kochen beginnt.
Dann die ganze Schüssel in eine zweite Schüssel mit Eiswasser stellen und gelegentlich rühren, bis die Vanillemasse komplett abgekühlt ist. Jetzt wird die creme fraiche dazugerührt und dann kommt das Ganze in die Eismaschine. Laut Bedienungsanleitung frieren.
Was übrig bleibt kann man in einem Plastikbehälter im Eisfach aufbewahren, aber vor dem servieren 30 Minuten im Kühlschrank antauen lassen.

Schokoladensauce
  • 1/4l Schlagobers
  • 150g Schokolade (mind. 70% Kakaoanteil)
  • 100g Milchschokolade
Schlagobers aufkochen, die Schokoladen in kleine Stücke brechen und einrühren, bis sie sich komplett aufgelöst hat. Einmal aufkochen.

Die Birnen hübsch in einer Dessertschale anrichten, das Vanilleeis in der Mitte anrichten und die warme Schokoladensauce darüberträufeln. Eventuell mit Mandelblättchen garnieren und sofort servieren!

For this recipe you can make the individual elements (pear compote, vanilla ice cream and chocolate sauce) by yourself or buy readymade to make it a fast pudding. However, if you do go down the ready made route, please consider the quality which you buy as you can taste the difference - especially with the vanilla ice cream!

Pear compote (for 6 servings)

  •     900g pears
  •     150g granulated sugar
  •     Lemon juice
  •     about 600ml water
Peel, halve and remove the core of the pears. Bring water, sugar and lemon juice to the boil, insert the pear halves, boil again and cook for about 5 minutes until soft.

 Vanilla ice cream

  •     250ml whipping cream
  •     4 large egg yolks
  •     2 heaped tsp vanilla pudding mix
  •     50g sugar
  •     270g creme fraiche
  •     1 teaspoon vanilla extract or vanilla sugar
Bring the cream to a simmer in a small saucepan, being careful that it does not begin to boil. Meanwhile, combine the egg yolks, vanilla extract, vanilla powder and sugar in a bowl until smooth.
Then pour over the hot cream and continue stirring. Now pour back into the saucepan and stir over a medium heat, stirring constantly until the mixture thickens and comes almost to a boil.
Pour this into a second bowl sitting in ice water, and stir occasionally until the mixture has cooled completely. Now mix in the creme fraiche and then put all of it into the ice cream maker and freeze according to instructions.
What you don't use can be stored in a plastic container in the freezer, but be sure to let the ice cream thaw before serving (about 30 minutes in the refrigerator.)
Chocolate sauce

  •     1/4l cream
  •     150g chocolate (min 70% cocoa content)
  •     100g milk chocolate
Bring the cream to the boil, break the chocolate into small pieces and stir in until it has dissolved completely. Bring it back to the boil.
Put the pretty pear in a dessert bowl to serve, serve the ice cream in the center and drizzle over the warm chocolate sauce. You might like to garnish with sliced ​​almonds and serve immediately!

    We listened to the unabridged audio version of Sparkling Cianide on a trip around Poland. I will always associate certain landmarks with Hugh Frasers soothing tones and the mounting tension. Love this dessert.
